I hope to eat more vegetables in my meals. I want to ensure that I will get all my daily nutrients. I want to eat less junk food.

What are 2 things that you are going to do to try to achieve that goal?
I eat a variety of healthy foods, but I ate alone on the couch while watching television and I didn’t really pay attention to the food I was eating. I can be more mindful of my eating habits and take more time to eat, notice when I am hungry or full, get involved in planning and preparing meals, and really enjoy my food. So I will eat more mindfully and plan my meals with the proper nutrients that I need.

Instructions:

1. Chop all the ingredients

2. Place 2 cups of the broth in a pot

3. When the pot is boiling, add the rest of vegetables that are chopped

4. Add the rice noodles, boil for 5 minutes

5. Serve hot!
